Baked Potato with Truffle Butter
Ingredients: Waxy potatoes, such as Bintje, Désirée, Kipfler, Patrone, Pink Fir Apple, Red Pontiac or Tasmanian Pink-Eye.OilSalt/pepperGreat Southern Black Truffle ButterMethod: Rub a large waxy potato with some oil.Season with salt and pepper.Place in the oven at 180ºC, cook until soft, turning once or twice to crisp the skin a little, cook for about two hours depending on their size.Remove from the oven, rest for 10 minutes before serving.Cut a cross in the top and pinch with your finger in a downward motion. Spoon in some Great Southern Black Truffle Butter and serve.

Ingredients: 4 cloves garlic, crushedOil, for frying300g chicken mince2 cup breadcrumbs [fresh]1/2 cup milk1 tablespoon Truffle Infused Extra Virgin Olive Oil.Parsley ½ cup of grated parmesan (optional)Salt/pepperMethod: Combine garlic, parsley, chicken mince, milk-soaked breadcrumbs in a bowl. Season with salt and pepper, roll into balls, cover and then chill for 30 minutes.                     Heat oil in a large non-stick frying pan over medium-high heat.
