Grating is another method of preparation that use fresh truffles to the fullest. However, the grating technique does not offer the texture standpoint provided by the shaving process.
Again, the more surface you expose, the more the aroma can be released and that’s all about grating. Using a Microplane, truffles have more surface area exposed, releasing the pungent aromatic compound.
Although this method is not as classic as shaving, grating truffle is recommended to finely process a delicious cream sauce and you can use it as dressing or toss it in pasta for a satisfying dish.
