Award-winning truffle producer’s dairy connections

Great Southern Truffles – Winner of Champion Butter at the Melbourne Royal Australian
Food Awards has a strong dairy industry connection with a handful of DIAA Members.

This association may well grow following a slew of major show successes for Great Southern Truffles’ products, which have taken out nine Gold Medals, plus Silver and Bronze across the

recent Royal Tasmanian, Sydney Royal Easter, and Melbourne Royal shows. As well as supplying fresh truffles and a range of other truffle products, the company also supplies its awardwinning truffles to DIAA Members That’s Amoré Cheese, Snow Brand Australia (manufacturers of Unicorn Cheese) and Udder Delights (Butter). Great Southern Truffles Managing Director and master taster Adam Wilson said their award-winning Black Truffle Butter relies on a regular supply of good quality butter. “If we do get a bigger distribution network following our recent wins, we may need to source additional butter supplies.”


Although, like the legendary Colonel Sanders of Kentucky Fried Chicken fame, Adam is tight-lipped on the actual type of butter used in his truffle butter recipe. “When it comes to butter fats, you have to get the right fats to make things well – there’s high fat, low fat and other factors to consider,” he said. Adam says winning the customer over requires making things great. “When we attend food shows and people taste our truffle products it’s just about a guaranteed sale. “However, this takes time. Getting products going and product development is a matter of strength and flavour balance. Some, like me, like a very strong truffle flavour,

others prefer it milder.” Adam, who has a background in olive growing, said it was the same

in the olive oil industry. “Extra virgin European olive oils are typically strong, but in Australia, consumers generally like the milder products. “You have to be very wary. There are different flavours, ranging from delicate, to fruity, right up to robust which might be too strong for some.”


Adam says the more adventurous consumer and foodies liked the richer, stronger flavour hits and there was a growing demographic eager for a new flavour experience. “We’ve formed a strong connection to a younger age group, who are easier to get hooked on new things like truffles than some of the more conservative older generation.” Adam also noted that top chefs are now using flavour enhancers and striving for bolder flavours in their dishes, and truffles were one way of achieving that.
