Shaving - Cooking Tips
Delicately shaved over pasta dishes, truffle risotto, polenta, soups, egg dishes, on hot pizza just before serving.
Shave fresh truffles on hot wonton soup, close the lid and let steep for 15-20 minutes.
Insert slices under the skin of the chicken and store overnight before cooking it.
Place a few slices inside a hot soup dumpling just before serving.
Shave on roast chicken, grilled steak or grilled fish: let the truffle slices absorb some of the heat and steam of the dish to enhance the flavour.
Truffle Eggs: that is one of our favourite ways to enjoy shaved truffles. Get a small container, shave fresh truffles and throw those into the egg mixture. Season with salt and pepper and stir gently. Close the lid and let steep for 30 minutes in the fridge. The eggs will absorb the pungent truffle scent during this process, resulting in one of the best scrambled eggs you will ever try.
Grating - Cooking Tips
Truffles love fat: put it inside cheese before grilling or pan-frying. The fat in the cheese will absorb the truffle flavour and aroma.
Their raw, earthy flavour perfectly complements cream, butter, cheese and foie gras.
