Potato salad with truffle aioli


Ingredients for Truffle Aioli Potato Salad:


  • 1 kg of potatoes (a mix of 500g sweet potatoes and 500g white potatoes)

  • 4 rashers of bacon, diced and cooked

  • 2 eggs, hard-boiled, chopped, or grated

  • Dill Springs

  • 180g of Black Truffle Aioli

  • Large spoon of sour cream


Preparing your Truffle Aioli Potato Salad:


  1. Cut the white potatoes and sweet potatoes to the desired size and cook until just tender. Cool and refrigerate overnight if possible.

  2. In a large bowl, mix the Truffle Aioli and sour cream. Add the potatoes, bacon, egg, and dill (set aside some bacon, egg, and dill for decoration).

  3. Gently mix until all the Truffle Aioli is spread evenly.

  4. Arrange the mixture in a serving bowl and garnish with a little of the reserved egg, bacon, and dill.
