Ingredients for Mini Quiches
(Approx 50 mini quiches)
Puff pastry for the base
600 ml of cream
6 eggs
500g of mushrooms, finely chopped
110g Truffle Sauce
110g Truffle Salsa
Parmesan cheese
A pinch of nutmeg
Salt and pepper
Oil spray for the tray
Method
Cut circles of puff pastry to fit a mini muffin tray (approximately 12 per pastry sheet).
Lightly spray the tray with oil and place pastry circles in each compartment.
Add half a teaspoon of Truffle Sauce or Truffle Salsa and another half teaspoon of sautéed mushrooms to each pastry cup. Top with the filling mixture and a pinch of Parmesan.
Divide the tray, creating half with the truffle sauce and half with the truffle salsa.
Bake at 180ºC for 10 minutes or until risen and golden.
Remove from the oven and allow them to cool for around 10 minutes before serving. They will sink slightly as they cool, enhancing their irresistible texture.
