Truffle is meant to be consumed as fresh as possible. However, if you buy fresh truffles and for any reason, you need to store them, waiting to cook for a special occasion or a unique dish. Below, we’ve put together some tips for you.

Following harvest, truffles continue to produce their aroma. The longer the fresh truffle is exposed to air, the more the aroma change and that’s why it is crucial to follow a simple storage procedure to bring their true magnificence flavour to your dish.


  • Fresh truffles should be gently wrapped individually in an absorbent paper (paper towel) and stored dry in an airtight container


  • Change the absorbent paper daily to avoid the build-up of too much moisture.


  • Truffles have a very strong aroma which will quickly impregnate any other foods in the fridge, so it's essential to store them in their own air-tight container for up to 10 days.


  • The optimum temperature is 3-5°C and 75-85% relative humidity.


  • If any mould is forming, gently wipe it off with a wet towel.
